Lycopene is a natural pigment contained in plants, belonging to a class of carotenoids, mainly present in the mature fruit of the solanaceous plant tomato. It is one of the strongest antioxidants found in natural plants. Lycopene is the main pigment in mature tomatoes and is an oxygen-free carotenoid. In 1873, Hartsen first isolated this red crystal from the berry dioscorea Tamuscommunis L. Also known as ψ-Carotene, which belongs to isoprene compounds, is one of the carotenoids. Because it was first isolated from tomatoes, it is called lycopene. In the past, people always believed that only those with β-A carotenoid that is cyclic and can be converted into vitamin A, such as α-Carotene β-Carotene is only related to human nutrition and health, while lycopene lacks this structure and does not have the physiological activity of vitamin A, so there is little research on it; However, lycopene has excellent physiological functions.
