Soybean phospholipid is a product extracted from the oil residue of soybean oil production. It is an ester composed of glycerol, fatty acids, choline, or bile amines, and can be soluble in oils and non-polar solvents. The composition of soybean phospholipid is complex, mainly including lecithin (about 34.2%), cephalin (about 19.7%), inositol phospholipid (about 16.0%), phosphoacylsserine (about 15.8%), phosphatidic acid (about 3.6%) and other phospholipids (about 10.7%), which are light yellow to brown viscous liquid or white to light brown solid powder.
